There has been no official comment from neither Starz nor Amazon MGM+ about why the planned change has been implemented, but there are plenty of general reasons why this could be. As we know from the recent delays (such as South Park Season 27 breaks), some TV shows like to have longer weekly holes between episodes for production purposes, and there is every chance that this is the case here.

When I say Outlander Season 8, what I really refer to is Claires (Caitiona Balfe) history. In the main series, she is an adult with her parents a fragment of the past experiencing the same time travel that parents Henry (Jeremy Irvine) and Julia (Hermione Corfield) did many years before.
But the two shows can finally cross each other directly. In the first moments of section 10 trailer, we see Henry Surprise Julia with a walk away and watch the pair on board a train for Inverness. But note the time difference – this scene clearly takes place before they end up in the 1700s Scotland.
This means that we are likely to see their family bid the couple goodbye when they stare out of the train window. Logically, this is likely to include a younger version of Claire that was already born before the events in Outlander: blood of my blood began.
Personally, I would like to see that this leads to Balfe himself performing in time for the season finale Cliffhanger. In time, we know it is realistically possible for adult claire to cross paths unconsciously with his parents after traveling over time, and it would create the ultimate emotional shock.
In order for this to be pulled off, it makes sense that the season finals took longer to develop as it has to coincide with Outlander Season 8 -TIME PLAN TO BALFE CAN SHOW (and keep the surprise successfully during wrapping). Basically, this could easily explain the delay.
There is another gift too. When I talked to Irvine and Corfield shortly after the series began, they told me they had no idea how season 1 should end. Four separate endings have been filmed, which is a great tactic to prevent spoilers from leaking.
